Potapple Salad


Oh my, I don’t know where to start. I love potato salad, especially the homemade ones. It’s fulfilling and full of flavours, usually we made it if we are having barbeque and have it as sides. You can also eat it on its own, just a yummy hearty happy bowl. However it’s been forever since I made the last one, two years back perhaps, and today just come as an opportunity to get my skill back as we got invited for a barbeque get together. Yup this is also some dish you can make to bring to friends house, hassle free with a smile.


Now, making potato salad, you can add on variety of ingredients to this, mayonnaise, hard boiled eggs, onion, capsicums (good for colour!),  sausages and broccoli are the usual on my list.  However today I am going to twist the taste a bit. Yesterday we got some pretty good crunchy apples, and when I was thinking of making a salad for the get together, I remembered making fruit salad with a dear friend (that was our guilty indulgence at one point-if you know what’s in the salad hahaha.. and I kinda add this and that in my head and figure I’m going to make a potato apple salad!


To make sure it’s not that crazy idea, I did check online - I googled “potato apple salad” and yup it’s legit. But that’s that. I did not look over the recipe just to make this originally my own taste.

So here how it goes:


12 Potatoes                 boiled with some salt and squared bite-sized 
                                  (almost the same size to apples)

3 Eggs                         hard boiled and cut to whatever your preference is

2 Apples                      squared and toss in some lemon juice

1 Green Capsicum       cut into smaller squares

¼ Grilled chicken        cut small pieces

                                                   

1 cup Parmesan cheese

Mayonnaise as much as needed

Salt

Pepper



Get a big bowl, and add all together, with love and smiles. Yay, it’s done!!

My verdict: Love it. Creamy potatoes with crunch of sweet apples, top with fine bit of chicken, bell pepper and parmesan. MmmmmMmmmmMmmmmMmmmm..
