Sardin Sambal - His Style
This is just one of a possible way to cook sardines. I know my mom have one way to cook this, and Mak Siti also have her family ways of cooking sardines. This is how my mother in law do it and how my husband expected sardines to be cooked.
Now this is all agak-agak measurements. How we do it is to proportionate things around the main ingredients. Yes, sometimes this does get me into trouble. Hahaha..but thats the beauty of cooking.

So:
A
1 can of sardines (for this one I use a small one)
B
5 pcs of dried chilli (bring to boil and strain them)
3 medium sized shallots
1 (or maybe 2) garlic
less than a thumb size shrimp paste - belacan la
1/4 teaspoon of tamarind paste
half cut and sliced sweet onion (bawang holland)
Steps:
Blend B with adequate water.
Heat some oil and put B in. After naik minyak - a balance consistency of the oil and B, add tamarind paste. Stir for a while then add the sardines (with a bit of the tomato paste). Cook a while then add the onion, stir until the onion felt slightly soft. Done
So, I'm not a regular in the kitchen. At best I am consistent in Ramadhan (masak for sahur la). So i guess its been a year long since I've done this. My first trial doesnt really made it the tasting test. Haha.. so the second time round kinda hits the mark ( after couple of phone calls to mama).
This time I write it down for future reference.

cili kering 7, masak n buang biji.
bawang merah sedang 2
bawang putih 3 (kadaran 1:3 dengan bawang merah)
blend dengan air skit
tumis dengan minyak kelapa sawit. lebih sket dpd portion blended.
masukkan sardin 1 tin (resipi ni tin kecil) dengan sedikit tomato sos yg dlm tin.
Voila!

Kali ni pakai tin besar 425g, sama je bawang merah n putih, cili kering jadi 10kpg and belacan seibu jari.
